Tastē Tuesday~ As potentially promised last week...a fish recipe! Dinner was successful though this recipe is not a typical fish dish for me. It is a little bit heavier with the creamy sauce, but for a winter's night and especially for a young-kid family friendly recipe, this recipe is a keeper. To make it even better, it is pretty quick and easy. Can't beat that on a busy week night. I tried to lighten it up a bit without compromising flavor or creaminess. I also opted for smaller servings (1/3 lb per person) so that the richness of the fish dish can be complemented by a nice, light side such as a salad with vinaigrette or artichoke. I chose to use Chilean Sea Bass because it was the best looking white fish at the market on my shopping day. However, any white fish (halibut, flounder, or cod) could easily be used with this whether you are looking for fresh, budget-friendly or just have a personal favorite. ** I used Corningware because I didn't have any available glass 8x8 dishes. Be careful with your dish since this is baked under a broiler. I went ahead and used the Corningware since the rack was 4" below the broiler, but I did have a lot of scrubbing to do to get it clean. You have to be careful with glass so the temperature between the glass and the extremely hot broiler doesn't cause it to shatter.
