
Starting from a box mix and a can of frosting, these brownies are simple to make. However, they do take some prep time because the base brownie layers has to cool before adding the top two layers. A bit indulgent, they make the perfect dessert to share at your next summer BBQ. Someone always asks for the recipe, so have a couple of copies on hand!
Goody Brownie Bars
Adapted from Betty Crocker
Ingredients
1 box Betty Crocker™ Supreme Ultimate Fudge brownie mix
Water, vegetable oil and eggs called for on brownie mix box
1 cup Betty Crocker™ Rich & Creamy vanilla frosting
1/2 cup lightly salted, dry roasted peanuts, coarsely chopped
2 cups Rice Krispies cereal
2/3 cup creamy peanut butter
8 oz semisweet chocolate chips
Directions
Heat oven to 350°F. Line 9x9-inch pan with foil. Spray bottom with cooking spray or shortening.
Make and bake brownies as directed on box. Cool completely.
Frost brownies with frosting. Sprinkle with peanuts; refrigerate while making cereal mixture.
Measure cereal into large bowl; set aside. In 1-quart saucepan, melt peanut butter and chocolate chips over low heat, stirring constantly. Pour over cereal in bowl, stirring until evenly coated. Spread over frosted brownies. Refrigerate 1 hour or until set before cutting. Store tightly covered at room temperature or in refrigerator.
One of these days I am going to try substituting marshmallow fluff for the frosting. Unfortunately, I usually only make these once a year, so if you try this variation or another one that turns out good, please let me know!
