
I was asked to do 60 cupcakes for my little boy #1's school holiday party. Hoping to begin "advertising" in our new hometown, I agreed. I bought some new toys because I always enjoy making snowflakes, and didn't want to use the chocolate molds I already had, and got started in the kitchen. I was pretty happy with how everything turned out when I decorated them on Thursday...until Friday morning when I got up to deliver them to school. The fondant had softened more than I ever had it soften in our old home on the opposite coast, and although they still looked okay, I wasn't disappointed that my audience was two classrooms of second graders. I will say that they could have cared less what they looked like...even the girls...so it turned out that they benefited from some yummy cupcakes, and I learned a bit about fondant decorating on the west coast! Lesson: when using fondant decorations on cupcakes, either decorate the day of the event or add 50% gum paste so as to prevent melting snowflakes.
