Yields: 3-4 dinner salads
Ingredients
3 Spicy Mango Chicken Sausages (Aidells Spicy Mango with Jalapeño Smoked Chicken Sausage is what I use), sliced into 1/4" slices
4 T fresh lime juice
3 T packed brown sugar
2 T olive oil
1/4 c chopped mint leaves
1/2 c chopped fresh cilantro
1 c chopped Basil
1 (2-3 inch) serrano chili, thinly sliced, including seeds
1 medium shallot, thinly sliced
1 avocado, pitted, peeled, and cut into chunks
1 firm-ripe mango, pitted, peeled, and cut into chunks
1 bag mixed salad greens (4-6 cups)
dry-roasted peanuts (optional garnish)
Directions
In a medium bowl, whisk together brown sugar and lime juice until sugar dissolves. Whisk in olive oil until well mixed. Add serrano pepper, shallot, cilantro, mint, and basil, stirring to combine. Set aside.
Saute' the sausage in a non-stick skilled for 5-8 minutes, until browned. Set aside.
Put salad greens, mango and avocado in a large bowl. Pour dressing on and mix gently until combined. Divide between bowls putting sausage rounds on top and sprinkling with peanuts if desired.
