I am one of those people who cut coupons. Sometimes this is fabulous - you really can save money on those grocery shopping trips. However, if you haven't noticed, most coupons aren't for heads of broccoli and bags of spinach. They tend to be more for packaged goods...many of the not so healthy type. I try to behave myself, but every once in awhile I can't pass up that bag of candy that I found a fabulous coupon for. This happened to be the case when I bought a bag of baking Reese's Pieces a few months ago. I didn't have a reason to buy them, except that I saved $1.00. So, when I saw this recipe a couple of weeks ago, I thought it would be a perfect way to use the bag taking up space in my cupboard. They are perfect fall colors as well, so the timing was ideal to bake up a batch!
I'll be honest, these cookies are not my all-time favorite cookie. However, they do have a substantial amount of peanut buttery goodness to them along with a nice thick, chewy consistency. I found that I was consuming them quite rapidly, so they must not be too bad! I froze the rest of the dough so we could have some colorful treats a little closer to Halloween. If you don't want to indulge in the entire batch yourself, the Triple Peanut Butter Cookie is a larger, bakery style cookie - great for potlucks, bake sales, and Halloween parties! Just make sure not to over-bake these; check out the notes section before tossing a batch into the oven. I hope you enjoy them!

Ingredients:
1/2 cup (1 stick) unsalted butter, softened
1 cup light brown sugar
1/2 cup reduced fat creamy peanut butter (or creamy peanut butter of choice)
1 large egg
2 teaspoons vanilla extract
3/4 cup flour
1 teaspoon baking soda
1 teaspoon cornstarch
1/4 teaspoon baking powder
1/8 teaspoon salt
1 1/2 cups old-fashioned quick oats
1 cup peanut butter chips
1 cup Reese's Mini Pieces Peanut Butter Candy in a Crunchy Shell (or regular Reese's Pieces)
Preheat oven to 350 degrees and line baking sheets with silicone mat or parchment paper. In a large bowl, cream together the butter, brown sugar, and peanut butter until light in color and fluffy.* Mix in the egg and vanilla. Add the flour, baking soda, cornstarch, baking powder, salt, oats, stirring to combine. Stir in peanut butter chips and Reese's Pieces.
Using a large cookie scoop (3 tablespoons), scoop out cookie dough and place on baking sheet.** If desired, press gently to slightly flatten cookie. They will not spread much while baking.
Bake the cookies for 10-12 minutes until the edges are just starting to brown and the top still looks slightly undercooked.*** Remove from the oven and cool for 10 minutes on the baking sheet before moving them to a wire rack to cool completely.
Notes
*If butter is not very soft, use a hand or stand mixer.
**If you don't have cookie scoops run out and buy a couple...or measure out with a tablespoon, roll and place on baking sheet.
***11 minutes was perfect in my oven, but I don't have a high-quality, calibrated oven, so watch that first batch to determine what works for your oven. Make sure you remove these tasty treats before the cookie is cooked all of the way through...and practice patience...don't touch them until they have cooled for 10 minutes on the baking sheet. This will allow the cookie to continue cooking a little bit without drying the cookie out.
